Spaghetti & Tofu in Spicy Peanut Sauce


Another new recipe from the same book as yesterday. I have one more to try from this book tomorrow before I give it back to the library.

4cups cook whole-grain spaghetti
1cup carrots, cut into matchsticks (I'm sure I didn't have a cup... it felt like I was cutting tiny carrots for HOURS though)
8ounces firm tofu, cubed (I prefer crumbled over cubed... and it was EXTRA firm)
1/3cup thinly sliced green onions
1/4cup chopped unsalted dry-roasted peanuts (I didn't have these but I regret it)

SPICY PEANUT SAUCE (which was not spicy)
1/3cup smooth peanut butter
1/3cup reduced sodium chicken broth (or no-sodium homemade-style)
1tbsp reduced sodium soy sauce
1tbsp grated fresh ginger
1tsp hot red pepper flakes
1 clove garlic, minced
1 1/2tbsp orange marmalade (I had none of this so I put the juice and zest from 1 orange in the mix)

In a large bowl, combine spicy peanut sauce ingredients. Add spaghetti, carrots and tofu. Toss to coat with sauce. Sprinkle with green onions and peanuts (seriously buy peanuts).

MY REVIEW: This was pretty good.. it made so much that I have to freeze it for next week though! Peanuts would have been excellent on this. It needed that little crunch. It was really smooth tasting though... if you know what I mean?

JASON'S REVIEW: I really liked it. I think I'm going to die* (not related to the food).

*Jason is no longer an advanced rider on his team but an EXPERT rider. He's tired tonight.. to say the least.

Tofu OR Turkey Spaghetti


Both a tofu and turkey variety of spaghetti this evening. It was really not that exotic. The sauce was Save-On's organic brand - roasted garlic flavor. I added some chickpeas and kidney beans for an extra boost. I was going to make a spinach salad on the side but instead just threw the fresh spinach right into the pots of sauce. In my pot, tofu cubes. In Jasons, ground turkey.

Poured my sauces onto some whole wheat pasta and voila! In case you're wondering, Jason's garlic toast burnt a little on the sides so I cut it off for the sake of not having burnt toast in my pictures. I don't make a habit of cutting crusts.

MY REVIEW: I wanted to make one of Jason's favorite dinners tonight. He changed the oil in my truck this evening as well as installed a new oil filter and windshield wipers. In return - spaghetti! This was pretty good. Makes for good lunches tomorrow too.

JASON'S REVIEW: It was good. Very filling. (I know he liked it more than this but he's busy looking for lost sunglasses or something?)

Now that he found them, "I can't wait to power up all the hills on my ride tomorrow because I'm full of pasta"

Before I go, I'd like to introduce the newest addition to our kitchen! A Delfino Blender.

Tandoori Chicken OR Tofu with Saffron Orzo

For my dinner, I marinated some cut up tofu in yogurt, garlic and tandoori spices last night. I added that to a stirfry with broccoli, carrots, mushrooms, zucchini and chickpeas. To go with this - some orzo with saffron in it. Delicious!
For Jason's dinner, I marinated some chicken breast in the same marinade last night and cooked it up for him. It was happily devoured.

MY REVIEW: Delicious - I love my tandoori spice. Didn't even miss the chicken. My tofu was delicious.

JASON'S REVIEW: He really liked it - wants more tandoori spice next time!
